What's Cooking at VYC this Season?

In addition to a great group of people, a world-class boating program, and an excellent bar, VYC also has a world-class kitchen!

Every year, a group of lucky volunteers get to be part of a panel to taste the new creations that our chef wants to put on the menu. This year, Chef Pablo didn't dissapoint, creating an excellent slate of new dishes to add to some of our old favorites!

Here are some of the dishes you can look forward to on the new club menu, which will be available after Opening Day:

Blue Cheese Salad

Green salad with onion, cucumber, apple, pineapple, bacon, and shrimp, with blue cheese dressing

Lemon Mixed Salad

Green salad with lemon and oregano vinagarette, with arrachera steak.

French Onion Soup

Chicken broth with white onion, bacon, and white wine

Shrimp, chicken, or beef, with red chili pepper sauce, Spanish paprika, beans, rice and guacamole

Stuffed with goat cheese, spinach and herbs. Served with vegetables, mashed potato and three chili bell pepper sauce

You know, I’ve been thinking. About Vallarta Yacht Club, to be exact. Cynthia and I have been members since we first arrived on our boat, Crème Brûlée, in 2004. At that time we were happy to find a comfortable, cool place to come, meet new people, relax with a cold beer, and just hang out. And we were really ready to have a place where we felt like we belonged, far away from our home in the Pacific Northwest.

Over that time, the Club has changed, and so have we. The patio tripled in size to become one of the most desirable and pleasant places we know of to spend time, the restaurant fare has improved dramatically, the furniture and décor has been continually upgraded, and the Club has developed an international reputation for being a World Class yacht racing venue. This Club just keeps getting better. And us? We’re 13 years older, we sold the boat, and we’re staying in a condo. What has not changed is how perfect the Club has always been for us.

It’s funny how you can go through life not paying much attention to your many blessings. In this, our thirteenth season in Paradise, we suddenly realized how special Vallarta Yacht Club has been in our lives. The Banderas Bay area has lots to offer in the way of interesting and fun things to do, great restaurants and bars, great shops and markets, endless choices for entertainment, and of course the incomparable Mexican culture. All that in a ridiculously pleasant climate on a beautiful bay surrounded by incredible beaches, with some of most amazing sunsets imaginable. That’s what brought us here in the first place, and what makes us stay around.

But we started to think about the one very special place in this tropical paradise that we have been so lucky to call our own. When we walk through the doors of the Club, we are not only greeted by familiar faces, a pleasant lounge, bar, restaurant and patio; we know we are in OUR place. We are free to listen to music, check our email, read a book, watch the boat traffic, play a game, have a drink, snack or meal, or just hang out quietly by ourselves or with friends. Sure, we have lots of options to go to restaurants that might have better menu selections, faster service, prettier décor, or better location. But we can’t just go there and be – knowing that we are in OUR space. We know that OUR place will always be filled with people who share common interests and values. Some we have known for years. But we also feel comfortable introducing ourselves to other members and guests that we haven’t seen before, knowing they will become new friends. And then there’s the Club’s staff. They only seem to care about whether we are happy, not whether we are buying something. No pressure. Good feeling. Wow.

So this year, more than ever before, we find ourselves feeling very lucky – and proud – to call ourselves members of the Vallarta Yacht Club, truly our home away from home. The Club has been, and still is, a special highlight in our lives.

Vallarta Yacht Club Invites You to Celebrate Opening Day

Sunday November 20 is the annual Vallarta Yacht Opening Day of the Boating Season Celebration.  Opening Day is a ceremony and celebration that marks the traditional start of the boating season. Similar celebrations happen at Yacht Clubs throughout the world. This event starts at 11:00 am and will be held at the Vallarta Yacht Club’s clubhouse located adjacent to Paradise Village Resort and Marina.

Key elements of VYC’s Opening Day include the traditional Flag Ceremony followed by a Public Open House and  presentation of the 2016/2017 events calendar. At 12:30 pm VYC’s junior sailors will host other youths from Guadalajara, La Cruz, and La Marina for day 2 of the annual “Dia de la Revolucion Regata”. Members and guests will have the opportunity to sign-up to go aboard one of the Club’s motorboats and observe the kids challenging each other’s sailing skills.

VYC Clubhouse Gets an Upgrade for the New Season

When you first walk into the VYC clubhouse this season, you are likely to be a little surprised. Thanks to the generous contributions of several members, in both funding and time, the VYC clubhouse has a new, modern look.

Major changes include:

  • New chairs throughout the inside area (32)
  • New bar stools (15)
  • New tall bar height tables
  • New granite top on the bar
  • New drop lights over the bar
  • New lounge area with two love-seats, coffee tables, end tables and side chairs
  • Two new large glass-top circular tables
  • New paint throughout
  • New speakers on the patio
  • New (well, almost) ICOM IC-802 SSB
  • New theatre lights on the patio

Our sincere thanks for the generous donations from our members that made this possible.

We are thrilled at the new look, and we think you will be too.

Tom Mortensen

 

We are, again, saddened to announce that another long time VYC member, Tom Mortensen, VYC’s first Treasurer, crossed the bar Wednesday, July 6. He died peacefully after three months of medical treatment, which included transfers between a number of hospitals and specialists care. He was born on November 14, 1945, in Ridgefield, Washington, to Jack Mortensen and Jean (Thomas) Mortensen.

Tom is survived by his wife, Victoria (Vicki), son, Chad Thomas Mortensen and daughter, Kimberlee M. Leber. He graduated from Ridgefield High School and joined the U S Navy during the Vietnam War. He captained two PT “swift boats” through a number of intense battles during which he was awarded the Silver Star (the nation’s third-highest combat medal) as well as the Navy Commendation Medal and a Purple Heart.

Returning from Vietnam, he pursued a career in the financial market in San Francisco, California, where he climbed the ranks and eventually worked for Rosenberg Capital Management as an Investment Counselor. Promoted to a Senior Partner in 1981, he contributed greatly to the heightened success of the firm until retiring in 1995, after 20 years of service.

Upon retirement, he passionately enjoyed the ocean, and he and Vicki chartered sailboats in Tonga, Fiji, and Australia.  Together, they sailed their own 42' Valiant from the San Francisco Bay Area to Zihuatanejo, Mexico before settling in Paradise Village for nearly ten years. While in Paradise Marina, Tom joined with Jim Ketler, and four others in establishing the reality of the Vallarta Yacht Club.

 Returning to the states and moving with his wife and son to Cedar Park, Texas, Tom became extremely active in his community for almost nine years.

The family would like to express their appreciation for all the tender loving concern and support he received from friends and neighbors when his health started to diminish.

In lieu of flowers, contributions may be made in memory of Tom Mortensen to Mental Illness Organizations, the American Heart Association, or plant a tree in his memory.
